Happy Sunday!!! I hope you had an amazing day and have great plans to unwind this evening!
I had a fabulous day! It started off with a 16km long run! I fueled with two sandwich thins, one smeared with coconut butter, the other with Dark Chocolate Dreams peanut butter!
I then geared up for my run, stepped one foot out the door and it started to RAIN! Ugh. NOT a fan of rain. But long runs are the most important runs of the week so I left anyways. Thankfully it was just a mist and it staggered between two types of mist: a light mist and a hard mist. But it wasn’t too humid and I didn’t get soaked so it wasn’t too bad. I did pretty well until the last 3km and then it was a bit of a struggle to finish up but I managed and made it in exactly 2:00.07! I was hoping to finish in exactly two hours but I’ll take that extra seven seconds!
When I returned I immediately chugged down a Grape G2 and then made myself a post-run Green Monster!
Heh…Robyn mentioned on one post that she loved my Green Monster glass! Well, you to can get your own Life’s Tasty Adventures glass just by heading out to The Old Spaghetti Factory and ordering a fancy, girlie drink!
This Green Monster included a frozen banana, frozen raspberries, two handfuls of spinach, 3/4c of vanilla soy milk and one giant scoop of whey protein powder! Totally hit the spot!
Not long afterwards my post-run hunger kicked in so I made lunch. My hamstrings and quads weren’t too impressed with me and so I wasn’t feeling up to making a complicated lunch so I just settled with the last of the leftover coleslaw and a veggie burger with tomato, onion, white wine mustard, cheddar cheese and BBQ sauce!
I’ve spent the rest of the afternoon in my PJ’s(!!!!) and wandering from room to room, finishing up The Girl With The Dragon Tattoo which was every bit as good as the movie (better even) and then starting The Girl Who Played With Fire. My goal during my school break is to get through the whole series! So far, so good!
But yes! It’s been a perfectly lazy Sunday afternoon! I can’t believe it’s evening already!
I love peanut sauces and this one was amazing! Just a small hint of chocolate but big on savoury bite! My only change was substituting cayenne pepper for chilli as I didn’t have any cayenne but it still worked out awesome! I paired it with coconut millet (I just added a bit of coconut butter when the millet was cooked and mixed) and then some collard greens which I just sauteed with some garlic, the juice of half a lemon and a bit of salt and pepper.
This was such a tasty dinner! So flavourful! Thankfully I have some leftovers for lunch tomorrow!
Alrighty friends, I need to go take my glass of wine down to the basement where it’s much cooler (all that cooking shot the temps up in the upper part of the house). Have a great evening!
