So yesterday I embarrassed myself. For two weeks now I’ve been saying that my project was due on Thursday, July 27th.
I repeat: Thursday, July 27th.
Do you get what happened already?
My project was due on Tuesday, July 27th, not Thursday! It was due last night!!! D’oh! I didn’t think anything of it until I saw fellow students pulling out their finished projects and putting them on their desks! I think my eyes turned as big as saucers! And this was just two weeks after our professor extended the deadline and lectured us about not having our projects done in time! NOOOO!!!! Thankfully she let me email it to her when I got home! *phew*
But that leaves me with an unexpected night off! Holy smokes! Whatever will I do?!
I only have two plans: 1. clean entertainment room (we’re having a party on Saturday), 2. Eat dinner.
That’s pretty much it. So here you go!

Can I confess that before the colour was thrown on the wall I was scared? My boyfriend and his brother picked it out (before I had moved in) and I tried to subtly persuade him to use a different colour but he went with it and you know what? I really like it! It adds a boldness and funtime feel that an entertainment area should feel like! We still plan to get some proper furniture in here but the odds ‘n’ ends will do for now!
While I was cleaning I had some squash in the oven! I was in the mood to cook up some spaghetti squash! Never had spaghetti squash before? It’s easy, fun and soooo healthy!
All you need to do is halve a spaghetti squash and either spray a cooking sheet with oil or, like I do, line the sheet with aluminum foil (to preserve the cooking sheet), spray the open squash with some spray butter. This just helps it to not stick to the surface. Fire up the oven to 400*F and place the two sides of the squash, open-side down onto the cooking sheet and cook for about an hour.
Let them cool for about 10 minutes and then grab a fork and start shredding the inside of the squash. If cooked right, it’ll just fall out into massive amounts of squashy string! Do that with both and add the innards to a bowl and discard the shell of the squash! There! Spaghetti squash!
You can add to this whatever you wish. Many people just use what they use when making real spaghetti, I used up the rest of my Tofurky sundried Tomato faux sausages with marinara. I also sauteed that up with a handful of spinach, green onion, portobello mushroom and the elusive purple pepper (which Kristina was right and tastes just like a green pepper – my least favourite of the peppers…).
I ate it with a slice of pumpernickel bread and a glass of red wine!
This is a GREAT way to get in your veggies if you have a hard time doing it. I always forget that the squash is a veggie so then I start to go overboard on the sauce but the entire dish is veggies! You just need to add your protein and carbs and you’re done! *wipes hands of it*
Now I think I will go, put my feet, up and stare at magical flat box in the entertainment room until I fall asleep just because I can
